In August 2019, as part of my Master's Degree, my team and I presented a business strategy for ECB to owner Alison Cowzer. We received an A+ grade for our report and presentation. The project had a focus on increasing revenue and entering the foodservice market.  

My first experience of South America. Peru offered some of the most spectacular sights, what struck me most however was the kind nature of the people I met. They were passionate about the land which provides for them and safeguarding natural resources for the future. 
 

I always find it hard to put into words my time in Cuba. I certainly returned home 

with a new found appreciation for my upbringing in Ireland. After a week with no interaction with the outside world and a workout in a "gym" involving broomsticks (they are very resourceful)  I set off towards NYC, to say it was a culture shock. 

I could never have understood the atmosphere that I now know of this city when I saw it on TV or in photos. We somehow managed to jam a lot of sight seeing and food eating in regardless of the upset stomachs we picked up in Cuba. All that is needed is a plethora of time and money to keep 

exploring the city.
